GAPS Friendly Cheesecake Recipe

"We have this cheesecake often for breakfast and even sometimes for dessert."

8 oz. cream cheese at room temperature
1/2 cup coconut flour
1/2 cup honey
4 teaspoons lemon juice
4 eggs, separated
1 teaspoon vanilla extract
Very soft banana (to make it especially breakfast-y)
Berries (optional)

Marsh Ad Fall Version

Preheat the oven to 350*F. Grease a 9"x9" baking pan.

In a medium bowl, place the cheese, flour, honey, lemon juice, egg yolks, and vanilla (and banana if using).

In another medium bowl, with an electric mixer on high speed, beat the egg whites until stiff peaks form. Using the same beaters, beat the cheese mixture until smooth.

Add the egg yolks to the cheese mixture. Using a spatula, pour the mixture into the pan.

Place in the oven for 20 minutes. Serve warm and enjoy!
